Pork surprise

Filling

250 ml coarsely chopped cooked pork
1/2 red pepper (pimento), seeded and chopped
5 ml butter
5 ml cooking oil
25 ml medium cream sherry
7 ml dried or 20 ml chopped fresh parsley

Potatoes

5 spring onions, chopped
30 ml butter
10 ml cooking oil
4 medium potatoes, cooked and mashed
2 ml salt
pinch cayenne pepper
100 g Cheddar cheese, grated (250 ml)
50 g cake flour (100) ml
2 eggs
125 ml milk
3 ml baking powder

Method

First prepare the filling. Fry red pepper in heated butter and cooking oil. Mix with meat, sherry and parsley. To prepare the potatoes, sauté spring onion in heated butter and cooking oil. Add to potato together with salt pepper, cheese and flour. Beat eggs and milk together and stir in. Sprinkle baking powder over and mix well. Spoon potato mixture into ramekins and make a hollow in the centre to form a nest. Bake at 180º for 10 minutes. Spoon in filling and bake for another 10 minutes.
