Pork surprise
Filling 250 ml coarsely chopped cooked pork Potatoes 5 spring onions, chopped Method First prepare the filling. Fry red pepper
in heated butter and cooking oil. Mix with meat, sherry and parsley. To
prepare the potatoes, sauté spring onion in heated butter and cooking
oil. Add to potato together with salt pepper, cheese and flour. Beat eggs
and milk together and stir in. Sprinkle baking powder over and mix well.
Spoon potato mixture into ramekins and make a hollow in the centre to form
a nest. Bake at 180º for 10 minutes. Spoon in filling and bake for
another 10 minutes.
