Pork stew

1 kg boneless pork, cubed
15 ml cooking oil
1 onion, chopped
5 ml salt
freshly ground black pepper to taste
15 ml cake flour
250 ml meat stock
500 g beans, shredded
30 ml lemon juice or 1 tomato, skinned and chopped
250 g potatoes, peeled and quartered

Method

Microwave oil at high (100%) for 1 minute. Stir meat into oil. Microwave at high (100%) for 8 minutes, stirring twice. Stir in onion, salt, pepper and cake flour. Microwave at high (100%) for 1 - 2 minutes. Add heated meat stock, cover and microwave at medium low (50%) for 50 minutes or until meat is nearly tender.  Add beans, potatoes and lemon juice/tomato. Cover and microwave (70%) for 20 minutes, stirring twice. Allow to stand for at least 10 minutes.
