Ham with honey-nut topping

1,5 to 2 kg smoked ham
1 small onion
4 whole gloves
2 bay-leaves
5 black peppercorns
500 ml apricot juice
250 ml water

Topping

120 nibbed almonds (200 ml)
100 ml thick creamy honey
15 ml each grated lemon and orange grind

Method

Place ham in a suitable microwave dish together with onion studded with cloves, bay-leaves, peppercorns, apricot juice and water and cover with lid or cling wrap. Calculate the cooking time at 10 minutes per 500 g and microwave on 70%, turning ham twice during the cooking time. Remove ham from liquid and cut away rind. Return ham to cooking liquid to cool completely. Mix topping ingredients and spread over ham. Place ham in a shallow microwave dish and microwave for another 5 to 8 minutes per 500 g, basting ham frequently with glaze. Allow to stand for 10 minutes before serving.
