Tasty eisbein

2 cured and smoked shanks of pork
1 medium onion, sliced
1 carrot, cut into chunks
1 bouquet garni
enough water to cover

Method

Place shanks in a large saucepan. Add onion, carrot and bouquet garni and cover with water. Bring to the boil, then reduce heat and simmer for 1 to 1 1/2 hours until meat is tender. Remove shanks from the liquid, score rind and place under a pre-heated element until crisp.
