Pork sausages with cheese and bacon

(Serves 4)

Kids of all ages love this home-style supper dish! Serve it with chips or mashed potatoes drowning in our gravy and a mixed salad dressing. Janet Hacking, who created this dish, says it is a great favourite in lunch boxes the next day.

500 g (8) good quality pork sausages
3 T (45 ml) Ina Paarman’s Tomato Pesto
1 cup (250 ml) grated Gouda or Cheddar Cheese
8 slices of rindless streaky bacon

Preheat the oven to 180°C. Slit the sausages lengthways and prize them open a little. Snip across one corner of a pack of Tomato Pesto and squeeze a toothpaste thick strip of pesto along the length of the cut. Divide the cheese between the sausages and wrap each sausage in a strip of bacon.

Butter a medium size ovenproof dish and arrange the sausages, cheese side up, in the dish. Bake for 35 - 40 minutes until brown.
